The trend towards globalisation threatens to erase them, with the serious consequence of the loss of both cultural diversity and biological diversity in agriculture. In the past, the introduction of certain plants into foreign food cultures encountered difficulties in slowly becoming an integral part of them. Some regional dishes could never have existed without the discovery of various products of pre-Columbian origin. When Europeans colonized the New World in the fifteenth century, they discovered plant species that were unknown at the time, but which are now part of our traditional cuisine: the potato, the tomato, the chili pepper and many others. It was the beginning of an early form of food globalization and a slow culinary hybridization. Pre-Columbian plants were integrated into foreign European culture to the extent that they were compatible with Western tastes and pre-existing culinary techniques. Thus was born a first form of culinary hybridization between America and Europe, but, without imitating exotic cuisine, European cuisine maintained its basic grammar, demonstrating that unknown foods can enter foreign cultures without distorting them thanks to the invention of an appropriate cuisine, with new culinary smells, colors and flavors. The enormous varietal biodiversity of Veneto region and Italy, distributed along 1,000 Km and a constellation of microclimates, is studied, identified and recovered by Smarties.bio in a Project, which also has a character of service to society, preventing the genetic erosion, and therefore the loss, of ancient varieties with enormous potential and marked intrinsic culinary value. The Gusto Italiano Project recovers tastes and flavors that were once the basis of our traditional cuisines, but today are almost unknown due to a frenetic market that, by paying attention only to beauty, has accustomed us to standardized products that have made us forget the variety of tastes and flavors.
